Ginger the Reindeer

Did you know that ginger takes its name from the Sanskrit word stringa-vera,which means “with a body like a horn”, as in antlers…as in reindeer!

To celebrate the holidays (and reindeer) I’m making Gingered Sweet Potato Soup which I perfected with the help of my taste-tester elves.  (Mamas are a lot like Santa.)  This hearty soup is made of olive oil, onions, carrots, sweet potatoes, lime and gets some zing from fresh ginger.

(Serving Instructions:  Keep refrigerated until use.  Remove desired portion from jar and heat to 165 degrees within 2 hours.  Reheat only once.)
